Caramels

  • 1 cup Butter or margarine
  • 2 1/4 cups Brown sugar
  • 1 cup Corn syrup, light
  • Dash Salt
  • 1 can Sweetened condensed milk
  • 1 teaspoon Vanilla extract
  • Melt butter in heavy 3-qt. saucepan. Add sugar and salt; stir in corn syrup, mix well. Gradually add milk; stirring constantly. Cook and stir over medium heat to firm ball stage (245°) about 12-15minutes. Pour into buttered 9 x 9 x 2 pan. Cool and cut into squares.

    Add 2 1-oz. squares unsweetened chocolate withthe milk for Chocolate Caramels

    Yield:2-1/2 pounds.
