Applesauce Fritters
In a medium bowl, beat the eggs foamy before beating in the milk, applesauce, two sugars, oil, and vanilla extract. Stir in the baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Gently stir in the flour, 1/2 cup at a time, until smooth.
In a deep-fryer, preheat3 to 4 inches of oil to 370 to 375°. When the oil is hot, drop the dough by tablespoonfuls into the oil and fry for 1 to 2 minutes, turning occasionally, until the fritters are golden brown. Using a slotted spoon, lift the doughnut from the oil and drain on a double thickness of paper towels or on a wire rack for 1 to 2 minutes. Continue until all the doughnuts are cooked. Roll each in granulated sugar and serve warm or cooled. Yield: 40 to 45 doughnuts.
