Cheese Potato Puff

  • 6 medium Potatos, cubed
  • 1 cup Cheddar cheese, mild, shredded
  • 2/3 cup Milk
  • 1/4 cup Butter or margarine, softened
  • 1 teaspoon Salt
  • 1 Eggs, beaten
  • Place the potatoes in a saucepan and cover with water; cover and bring to a boil. Cook until tender, about 15-20 minutes. Drain and mash. Add 3/4 cup cheese, milk, butter and salt; cook and stir over low heat until cheese and butter aremelted. Fold in eggs. Spread into a greased baking dish. Bake, uncovered, at350° for 25-30 minutes. Sprinkle with the remaining cheese. Bake 5 minutes longer or until golden brown. Yield: 6 servings. Recipe can be doubled.
