Chive Potato Souffle

  • 2 cups Potatos, mashed, plain
  • 3/4 cup Cheddar cheese, sharp
  • 1/2 cup Sour cream
  • 3 to 4 tablespoons Chives, minced
  • 1/2 teaspoon Salt
  • 3 Eggs, seperated
  • {blank} Additional chives
  • In a large bowl, combine the potatoes, cheese, sour cream, chives and salt. Beat egg yolks; stir into potato mixture.In a small mixing bowl, beat egg whitesuntil stiff peaks form; gently fold into the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 40-45 minutes or untila knife inserted near the center comes out clean. Sprinkle with chives. Serveimmediately. Yield: 6 servings.
