Roast Turkey (w/cheesecloth)

  • 1 Turkey
  • 1 stick Butter, melted
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Paprika
  • Dip cheesecloth in hot water, then squeeze out excess water. Use 2 layers of cheesecloth to cover entire bird. Mix salt, pepper, and paprika in small bowl, then rub the turkey inside and outside with the mixture. Baste with melted butter. Insert a meat thermometer in the thigh (not touching bone), and cook in roasting pan in 325°F oven, basting about every 30 minutes. When meat temperature reaches 170°, remove cheesecloth, then continue cooking until temperature reaches180°. Remove turkey from oven and allow to sit on countertop for one hour before carving. (One hour very important!)
