Mama's Minestrone Soup

  • 1/2 packages Keilbasa
  • 3 Carrots
  • 1 Celery, stalks
  • 1 Onions
  • 1 cups Green beans
  • 1 cans Beans, small white
  • ~ Water
  • 1 cans Tomatos, fresh, chopped
  • 1 small Zucchinis
  • 1 cups Corn, frozen
  • 2 cups Pasta, ditalini
  • ~ Salt and pepper to taste
  • 1/2 teaspoons Oregano
  • 1 cubes Beef bouillon
  • All measurements are estimates. I add or reduce depending on how large a pot Iam making.

    Slice kielbasa into rounds.Chop vegetables into coarse chunks. Instockpot cook kielbasa. Add onions and garlic and cook until softened. Add water and scrape browned bits to make water pick up color. Add seasonings. Add celery, carrots. Simmer 45 minutes. Add green beans, tomatoes, beans, corn and zuchini. Bring to simmer and cook about 20 minutes. Add pasta and simmer until cooked. Taste and correct seasonings. Ilike to let it sit overnight and reheatthe next day.
