Roasted Pepper and Tomato Sauce (for Pasta)

  • 2 tablespoons Olive oil
  • 1 large Onions, chopped
  • 1 jar (7oz) Peppers, roasted red
  • 2 cloves Garlic, chopped
  • 1 Chili pepper, dried
  • 1 large can Tomatos, plum
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 1/2 teaspoon Basil
  • ~ Cheese, Parmesan
  • Dice red peppers and drain tomatoes and chop coarsely.

    Heat oil in medium-sizeskillet over medium high heat. Add onion; cook until softened. Add red peppers, garlic and saute until golden but notbrown. Add tomatoes; cook uncovered until bubbling; about 4 minutes. Stir in salt, pepper and basil. cook 1 minute.Remove chili pepper.

    Serve over linguini.

    Sprinkle with cheese if desired.

    Serves 4.
