Sweet n' Sour Tofu (beef, or chicken)
Drain pineapple reserving 1 cup of the juice and set aside. In a bowl, mix pineapple juice, soy sauce, vinegar, tomatoes, cornstach, and ginger. Drain tofu, pat ry, and slice into 1 inch cubes. If using meat, slice into strips. Heat oiland saute tofu or meat for 10 minutes.Slice peppers and carrots into strips.Add to tofu and saute for 3 minutes. Add sauce to the saute mixture and cook, stirring until sauce thickens but carrots are still somewhat crisp (about 5 minutes). Add pineapple chunks and heat throughly.
Serve over rice, brown rice, or rice noodles.
