Janet Clark's Rice and Broccoli Casserole

  • 2 cups Rice, cooked
  • 3/4 cups Cheese, Cheddar
  • 2 Eggs
  • 10 ounces Broccoli, frozen
  • 1 small Onions, minced
  • 1 small can Mushrooms
  • 1 Eggs
  • 2 tablespoons Milk
  • 1/2 cup Cheese, Cheddar
  • Mix together rice 3/4 cheese and 2 eggs. Form in bottom of greased piepan likea crust. Steam together broccoli, onions and mushrooms. Drain into bowl. Addbeaten egg and pour over rice. Cook about 20 minutes at 350 degrees. Top withrest of cheese and cook until melted and bubbly. Done when egg is set.

    Good meatless meal. Sharp cheddar cheese or Monteray Jack is good.
