Mexican - Spanish, Rice Dishes

Mama's Puerto Rican Rice and Beans

  • 2 cans Kidney beans
  • 1 small can Tomato sauce
  • 1 envelope "Sazon" seasoning
  • 1 branch Cilantro, chopped
  • 1 small Potatos
  • 8 Olives, green
  • 1 small cube Ham, diced
  • 1 tablespoon Olive oil
  • 1 1/2 teaspoons Salt
  • 3 cups Rice, cooked
  • In saucepan, heat olive oil. Add all seasonings except tomato sauce and beans. Saute for about 3 minutes. Add tomatosauce and saute about 1 more minute. Add undrained beans from can. Add water to cover, about 1 can. Simmer on medium to low for about 20 minutes, stirring tokeep from burning. Cook until sauce thickens.

    Serve over rice.

    Sazon is foundin the ethnic food section. Any product named "Sofrito" can be substituted.
