Mama's Baked Macaroni and Cheese
Cook elbow pasta until al dente. Gratecheese and set aside. Melt margarine in saucepan on stove . Add flour, mix well with margarine. Cook slowly until bubbling and lightly brown. Add milk. Cook until edges start to bubble stirring constantly. Sauce will thicken. Add mustard and stir. Take out a small amountof sauce into small bowl let cool abouta minute. Add egg and beat well. ( This keeps egg from scrambling) Now add this slowly to rest of sauce. Cook about 1minute. Take off heat and add grated cheese slowly. Mix until cheese melts. In casserole dish, add elbows and sauce,mix well. Top with bread crumbs and more cheese if desired. Bake 1/2 hour @ 350.
You can also make sauce in microwave. This makes a thick macaroni and cheese, if you like it creamy, don't use eggand add a little more milk. I use a very flavorful cheese.
