Beef, Mexican - Spanish

  • 5 Plantains, very ripe
  • 1/2 pounds Ground beef
  • 1/2 Pepper, green, chopped
  • 1 small Onions, chopped
  • 1 1/2 tablespoons Olive and capers mix
  • 1/4 cups Oil
  • 6 tablespoons Tomato sauce
  • 1 small can Green beans, French cut
  • 4 Eggs, beaten
  • 1 teaspoons Salt
  • Cook ground beef in saucepan. Add pepper, onion, salt, pepper, olive caper mixand tomato sauce and stir until cooked. Drain green beans and add to meat.

    Peel plantains. Cut in half and slice eachhalf into four lengthwise slices. Fry in oil until soft and golden.

    In ovenproof square pan, that has been greased,layer 1/2 beaten egg, 1/3 of plantain, 1/2 of meat mixture, 1/3 plantain, 1/2/of meat, 1/3 plantain, 1/2 of egg.

    Cook in 350° oven for 30 minutes or until egg is fully set.
