Szechuan Beef and Snowpeas

  • 1/2 pounds Beef, boneless
  • 2 tablespoons Cornstarch
  • 1 clove Garlic
  • 1/2 to 1/4 teaspoons Pepper, red
  • 6 ounces Snowpeas
  • 1 medium Tomatos
  • 3 teaspoons Soy sauce, light
  • 1 tablespoon Sherry
  • 3/4 cups Water
  • 2 tablespoons Oil
  • 1 medium Onions, chopped
  • Slice beef across grain into thin strips. Combine1 tbsp of cornstarch and 1tbsp. soysauce with sherry and garlic in small bowl. Stir in beef. Let stand 15 minutes. Meanwhile combine water, remaining cornstarch, soysauce, red pepper and set aside. Heat 1 tbsp. oil in skillet. Add beef and stirfry 1 min. Remove from heat. Add rest of oil in same pan. Add snow peas, onion and sitrfry for 3min. Add beef, soy sauce mix and chunked tomato. Cook and stir until sauce boils and thickens.

    Serve over rice.
