French Pancakes

  • 1 cup Bread flour
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking powder
  • 2 tablespoons Powdered sugar
  • 1/2 teaspoon Grated lemon rind
  • 1/2 teaspoon Vanilla
  • 2/3 cup Milk
  • 1/2 cup Water
  • Sift flour with baking powder, salt andsugar. Put in a bowl and mix well. Add liquids and combine with a few swift strokes. The batter will be slightly lumpy. Lightly grease a hot pancake grittlewith a piece of bacon. Drop batter by spoonfuls. This makes a small, thin, crisp pancake. Serve with syrup, honey orjelly.
