Cherry Fruit Soup

  • 1/4 Lemon
  • 1 3/4 cups Water
  • 2 cups Pitted sweet cherries
  • 1/4 cup Sugar
  • 1/4 teaspoon Cinnamon
  • 1/2 cup Sweet red wine
  • 1 1/2 teaspoons Cornstarch
  • Blender Directions: Remove seeds from lemon, cut into small pieces, and place in blender goblet. Add water and blend until lemon is liquefied.

    Pour into saucepan and add cherries, sugar, and cinnamon. Bring to a boil, lower heat, andsimmer 5 minutes. Add wine. Dissolve cornstarch in a small amount of cold water and stir into soup mixture. Cook­stirring constantly­until soup is slightly thickened. Chill in refrigerator.

    Toserve: Remove cherries from soup with a slotted spoon and place in blender goblet. Add 1/2 cup soup and blend on low speed until cherries are coarsely chopped. Return cherries to soup mixture. Serve in individual bowls or glasses.
