Cheese Toast Toppers

  • 2 tablespoons Butter
  • 1 medium Onion, finely chopped
  • 1 large Tomato, finely chopped
  • 2 tablespoons Chopped pimiento
  • 1 teaspoon Worcestershire sauce
  • 2 drops Tabasco sauce
  • 1 tablespoon Flour
  • 1/2 teaspoon Pepper
  • 1/2 cup Water
  • 1/2 teaspoon Butter
  • 1 cup Cheddar cheese, grated
  • 1/2 teaspoon Salt
  • Melt butter in pan and add onion. Whenslightly brown, add tomato and pimiento. Simmer until tomato is soft. Add cheese, Worcestershire sauce, Tabasco, saltand pepper. When cheese is thoroughly melted, thicken with the flour and water, which have been mixed together, and cook slowly 5 minutes. Let cool. To serve, heap on small rounds of toast and place in hot oven, 400°F, for about 10 minutes. This mixture will keep in the refrigerator for a week or so.
