Chocolate Cream Pie

  • Two 1 oz squares Unsweetened chocolate
  • 1/4 cup Cornstarch
  • 1 cup Sugar
  • 1/4 teaspoon Salt
  • 2 cups Milk, scalded
  • 3 slightly beaten Egg yolks
  • 2 tablespoons Butter
  • 1/2 teaspoon Vanilla extract
  • One 9-inch Baked pie shell
  • 3 stiffly-beaten Egg whites
  • 6 tablespoons Sugar
  • Mix cornstarch, 2/3 cup sugar, and salt. Gradually add milk. Cook in double boiler untill thick (about 10 minutes), stirring constantly. Melt unsweetened chocolate in scalded milk. Chocolate willmelt over low heat without being grated. Slowly add a small amount of hot mixture to egg yolks. Stir into remaining hot mixture. Cook for 5 minutes. Cool.Add butter and vanilla. Pour into cooled baked shell and spread with meringue made of egg whites and 6 tablespoons sugar. Bake at 350°F for 12 to 15 minutes.
