Banana Pancakes
Blender Directions: Place eggs and buttermilk in blender goblet. Add remaining ingredients. Blend at high speed until batter is smooth and bubbly. Use a rubber spatula to scrape the sides of the goblet to be sure all the flour is blended. Slice banana thin and stir into prepared pancake batter. Pour batter directly from goblet onto hot griddle, allowing 1/4 cup batter for each pancake.
Mixer Directions: Beat 3 eggs on medium speed until fluffy. Combine buttermilk and baking soda. Sift dry ingredients andadd eggs alternately with the buttermilk. Add to melted butter. Slice banana thin and stir into prepared pancake batter. Pour batter onto hot griddle, allowing 1/4 cup batter for each pancake.
