Potato Pudding

  • 6 large Potatoes
  • 1 medium Onion
  • 4 Eggs, well beaten
  • 3/4 cup Flour
  • 1 1/2 teaspoons Salt
  • 1/4 teaspoon Pepper
  • 4 tablespoons Oil
  • 1 teaspoon Baking powder
  • Grate raw potatoes and onion. Mix withbeaten eggs, flour, salt, pepper, baking powder, and melted fat. Heat baking pan well - greased and sprinkled with matzo meal. Pour potato mixture in and bake in 375°F oven for about 45 minutes until brown. Cut into squares and serve asside dish with chicken or meat.
