Ham and Eggs Puff

  • 1 tablespoon Quick-cooking tapioca
  • 3/4 teaspoon Salt
  • 1 dash Pepper
  • 3/4 cup Milk
  • 1 cup Soft bread crumbs
  • 1 tablespoon Butter
  • 1 cup Ground, cooked ham
  • 4 well-beaten Egg yolks
  • 4 stiffly-beaten Egg whites
  • Combine tapioca, salt, pepper and milk in double boiler. Cook 8 to 10 minutes,stirring frequently. Add crumbs and butter. Cool slightly. Add ham. Fold inegg yolks; fold in egg whites. Turn into hot, greased, 9-inch skillet. Cook over low heat 3 minutes, then in moderateoven at 350°F for 15 to 20 minutes.
