Greek Chicken

  • 2 pounds Chicken breasts
  • 3 Tomatos sliced
  • 3 Scallions, chopped
  • 1 tablespoons Parsley
  • 1 Garlic cloves
  • 1/2 cups Olive oil
  • 3/4 cups Bread crumbs
  • 2 large Onion, sliced
  • 3/4 cups Water
  • 1 Lemons
  • 2 tablespoons Butter
  • ~ Salt and pepper to taste
  • 1 teaspoons Oregano
  • Cut chicken into 4-6 slices. Brown chicken in pan with small amount of the olive oil. Place in greased pyrex dish. Sprinkle with salt and pepper, oregano, and rest of olive oil. Cover with tomatoes, scallions, parsley and garlic. Top with bread crumbs, dot with butter. Layer onion rings and lemon. Add water to the pan that you browned the chicken in and scrape up browned bits. Add to chicken dish.

    Bake at 350° 30-40 mins covered with foil. 10 mins uncovered.

    Serve with rice.
