Apple Bars

  • Crust ~
  • 1 tablespoon Sugar, granulated
  • 1 teaspoon Salt
  • 1 cup Crisco shortening
  • 1 Egg yolk+enough milk to = 1/2c
  • 2 1/2 cups Flour
  • Filling: ~
  • 1 1/2 cups Sugar, granulated
  • 5 cups Apple slices, Granny Smith
  • 2/3 cup (6 lg or 24 small) Soda crackers, crushed
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • Frosting: ~
  • 1 cup Powdered sugar
  • 2 teaspoons Lemon juice
  • Dash Water
  • Crust: Combine flour, sugar, salt and shortening. Beat yolk with milk, add to dry ingredients. Divide mixed dough in 1/2. Roll out for large cookie sheet. (I roll out on parchment paper then cut to fit pan.) Sprinkle crushed crackers on bottom pie crust, add filling evenly. Cover with top crust. Seal. Brush with beaten egg white.

    Bake at 350° for 40 minutes.

    Mix frosting while apple bars are baking. Blend powdered sugar with lemon juice and enough water to desired consistancy. Drizzle on frosting when pie barsare cool.
