Cashew Chicken

  • 1 pound Boneless chicken breast
  • 2 tablespoons Cooking Sherry
  • 2 Tablespoons Oil
  • 1/2 Cup Chopped Onions
  • 1/2 cups Cashews
  • 1 cups Chicken Broth
  • 3 Tablespoons Soy sauce, dark
  • 4 tablespoons Cornstarch
  • Cut Chicken breast into cubes, mix withcooking sherry and 2 Tablespoons cornstarch.

    Cook lightly in oil with onions, then add cashews.

    Mix chicken broth , soy sauce and 2 tablespoons cornstarch. Add to chicken in pan and simmer until sauce is thick.
