Beefstick

  • 5 pounds Ground beef
  • 2 1/2 teaspoons Garlic Salt
  • 2 1/2 teaspoons Mustard seed
  • 2 1/2 teaspoons Peppercorns
  • 1 1/2 teaspoons Hickory Smoke salt
  • 4 1/2 tablespoons Morton's Tender Quick
  • Mix all ingredients. I've found the best way is to mix all of the spices and Quick Cure in a bowl, then gradually add to ground beef. Work with your hands. Refrigerate the mixture in a large Tupperware container for 3 days, mixing well once daily. On the 3rd day, divide into 5 even portions and roll with hands on countertop into firm rolls about 1 1/2 inches in diameter and 12 inches long. Place on foil-covered broiler pan or cookie sheet. Bake for 8 hours at 150° or aslow as your oven can go. (Overnight works well.) Remove from oven and wrap individual sticks in aluminum foil. Refrigerate.
