Date Balls

  • 1/2 cup Margarine
  • 8 ounces Chopped dates
  • 1 cup Sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 2 cups Rice Krispies
  • 2 cups Pecans, chopped
  • 1 cup Coconut, flaked
  • Combine first 5 ingredients in a large (5 qt) heavy sauce pan. Cook over low heat 10 minutes, stirring constantly. Remove from heat. Add Rice Krispies and chopped pecans, mixing well. Let cool until cool enough to handle, then roll into 1-inch balls with hands. Roll in coconut if desired.
